Almond ANYTHING is my absolute favorite an I must say this almond cake is the perfect spring treat! It has definitely become a family favorite. If I let him I'm sure my 3 year old son would probably eat the whole cake himself!!

Soft, lightly sweet, and just a little bit elevated—this is the kind of cake that works for everything. A slow morning with coffee, an afternoon treat for the kids, or something beautiful to set out when company comes over.

This gluten-free almond bundt cake has quickly become one of those recipes I keep coming back to. It’s simple, reliable, and always turns out with that perfectly moist, tender crumb we’re all looking for.

✨ Tips for the Best Texture

Grease your pan well

Almond flour cakes are more delicate than traditional cakes and can stick easily.

Use fine almond flour

This gives you that soft, tender crumb instead of a gritty texture.

Let it cool completely

The structure sets as it cools—cutting too early can make it crumbly.

It’s even better the next day

The moisture settles and the flavor deepens beautifully.

🌿 Easy Variations

🍋 Lemon Almond Cake

Add extra lemon zest and finish with a simple lemon glaze.

🍊 Orange Olive Oil Version

Swap the oil for olive oil and use orange zest for a deeper, richer flavor.

🍓 Berry Addition

Fold in fresh or frozen raspberries for little bursts of sweetness.

🌰 Almond Crunch Top

Add sliced almonds to the bottom of the pan before baking for a toasted finish.

  • 1½ tsp baking powder (gluten-free)

  • ½ tsp salt

  • 4 large eggs, room temperature

  • ½ cup oil or melted butter

  • ⅓ cup milk (dairy or almond milk)

  • 1½ tsp vanilla extract

  • ¾ tsp almond extract (optional but recommended)

  • Zest of 1 lemon or orange (optional)

Instructions

  1. Preheat your oven to 350°F and grease a bundt pan very well (this is key for almond flour cakes).

  2. In a large bowl, whisk together the almond flour, sugar, baking powder, and salt until everything is evenly combined.

  3. In a separate bowl, whisk the eggs, oil (or butter), milk, vanilla, almond extract, and citrus zest until smooth.

  4. Pour the wet ingredients into the dry and mix until you have a thick, smooth batter.

  5. Transfer the batter into your prepared bundt pan and gently smooth the top.

  6. Bake for 45–55 minutes, until the top is golden and the center is fully set.

  7. Let the cake cool in the pan for about 15–20 minutes, then carefully invert onto a rack to cool completely.
