March in New Hampshire means one thing β€” maple season.

This is the time of year when sugar shacks fire up their evaporators, steam rolls out of little wooden buildings in the woods, and families all over the state start tapping their maple trees. Even backyard hobbyists are out there collecting sap in buckets, waiting for that perfect freeze-thaw cycle that gives us our famous syrup.

There’s something about this season that feels deeply New England β€” cold mornings, muddy boots, and the smell of sweet steam rising through the trees.

So instead of just pouring maple syrup on pancakes, I wanted to turn it into something we can enjoy every single morning.

Enter: Maple Brown Sugar Coffee Syrup.

It’s cozy. It’s simple. And it’s one of my favorite ways to celebrate maple season right from my kitchen.

I know that seems like a small luxury but I'm sure I'm not the only one with a long to do list so its definitely a blessing and when I can avoid adding another task no matter how small it may be!

🍁 Maple Brown Sugar Coffee Syrup

Ingredients

  • 1 cup water

  • ΒΎ cup pure maple syrup (dark/robust is amazing here)

  • Β½ cup brown sugar (light or dark)

  • 1 tsp vanilla extract

  • Pinch of sea salt (optional, but highly recommended)

Instructions

  1. Combine water, maple syrup, and brown sugar in a small saucepan.

  2. Heat over medium, stirring occasionally, until the sugar fully dissolves.

  3. Once it starts to lightly simmer, reduce heat to low and simmer 5–7 minutes to slightly thicken.

  4. Remove from heat and stir in vanilla and a pinch of salt.

  5. Cool completely, then pour into a clean glass bottle or syrup dispenser.

  6. How much to use: Start with 1–2 Tbsp per cup of coffee and adjust to taste.
