There’s something about lemon that just feels like a fresh start.

These gluten-free lemon scones have quickly become one of my favorite go-to bakes—soft, buttery, and bright with just the right amount of sweetness. They’re the kind of thing you make on a slow morning, coffee in hand, kids nearby, sunlight coming through the kitchen window.

And the best part?

They actually turn out the way you want gluten-free baking to turn out— tender, fluffy, and not dry or crumbly.

✨ Why This Recipe Works

Gluten-free baking can be tricky—but this recipe is built to avoid the common issues.

  • Cold butter + cream = soft, flaky texture

  • Chilling the dough = better structure and rise

  • Balanced moisture = no dry, crumbly scones

It’s simple, but those little details are everything.

🍓 Easy Variations to Try

Once you make these once, you’ll want to play around with them:

  • Blueberry Lemon – fold in 3/4 cup blueberries

  • Lemon Poppy Seed – add 1 Tbsp poppy seeds

  • Dairy-Free – swap in coconut cream + vegan butter

  • Less Sweet – reduce sugar to 1/4 cup for a more classic scone

💡 Pro Tips for Perfect Scones

  • Keep everything cold—this is key for texture

  • Don’t overmix (this is the #1 mistake)

  • If dough feels dry → add a splash of cream

  • If too wet → lightly dust with flour (no kneading)

  • Chill before baking—don’t skip this

🥐 Gluten-Free Lemon Scones Recipe

Ingredients

Dry:

  • 2 cups gluten-free all-purpose flour (with xanthan gum)

  • 1/3 cup sugar

  • 1 Tbsp baking powder

  • 1/2 tsp salt

  • Zest of 2 lemons

Wet:

  • 6 Tbsp cold butter, cubed

  • 2/3 cup cold heavy cream

  • 1 egg

  • 2 Tbsp fresh lemon juice

  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 400°F and line a baking sheet. This helps everything bake evenly and prevents sticking.

  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and lemon zest. You want everything evenly combined so each bite has that bright lemon flavor.

  3. Add your cold butter and work it in until the mixture looks like coarse crumbs with small pea-sized pieces. These little bits of butter are what give you that soft, flaky texture.

  4. In a separate bowl, whisk together the cream, egg, lemon juice, and vanilla.

  5. Pour the wet into the dry and fold just until combined. The dough should look a little shaggy—don’t overmix or your scones will turn dense.

  6. Turn it onto parchment and gently press into a circle about 1 inch thick. No kneading—just a light touch.

  7. Slice into 8 wedges and pop them in the fridge for 15 minutes. This step makes a big difference for gluten-free texture and helps them hold their shape.

  8. Bake for 14–17 minutes until lightly golden on the edges and set in the center.

  9. Let them cool for about 10 minutes before adding glaze so it doesn’t melt right off.

🍋 Simple Lemon Glaze

  • 3/4 cup powdered sugar

  • 1–2 Tbsp lemon juice

  • pinch of salt

Mix until smooth and drizzle over warm (not hot) scones.
